This October, Meze brings you Thomas Curtis’ Whipped and Charred: a classic cook book packed with dishes that everyone can tuck into. Becoming the head chef of his family pub at just 25, Thomas has a longstanding passion for the culinary arts, yet whilst he admires Michelin-starred chefs and the like, he is keen to keep things a little closer to home. Community is at the heart of Thomas’ work and his ingredients are locally sourced, fresh and seasonal. ‘Closer to home’ actually means much more to Thomas than being part of a thriving local community; his family ties – especially those to his late father – play a huge and influential role in his cooking. This sentiment is reflected in recipes such as ‘my dad’s chilli con carne’. Although the book retains this homely feel and benefits from Thomas’ personal touch, it also flourishes in its ability to inspire budding chefs across the county with a positive can-do attitude.
